Comes from the shoulder/neck of the pig, a unique cut for its extensive marbling and lack of tough inedible elements.Coppa does not have distrinctive flavor beyond sweet aged meat flavor. Coppa can replace proscuitto in most applications. It is perfect in antipasto with aged cheese.
Mocetta (Bresaola Piccola)
A specialty of the Valle d'Aosta region of Italy bordering France. It is the eye of the round, massaged with a simple blend of spices and then hung to dry. It is a perfect substitute for beef carpaccio (top with olive oil, Parmigiana Reggiano shavings, salt and fresh ground pepper. Also wonderful on argula topped with fresh squeezed lemon juice. Experience a special kind of pizza by topping it with Mocetta and Fresh Mozzarella.
In Italian this means Cooked Ham. Use like you would any other deli ham. It offers some unique qualities not found in American ham. It is cooked very slowly to create a unique crumbly texture. The spices used (rosemary and sage) are more aromatic and there is no smoking or sweetening making it more delicate. It is also very low in sodium.

Originating from Bologna. It is the forefather of American baloney. It is an emulisfied cooked ground pork seasoned with pepper and garlic. It is most used in sandwiches and antipasto plates. Use it in party trays and cubed up in pasta salads.
Old Forest, Picante, Gypsy and Mailander
These are one of Toski Sands favorites. Beautiful balances flavor with minimal fat. Great as an appetizer and outstanding in a sandwich.
