Roasted Garlic Smashed Potatoes

Smashed Potatoes are an easy version of mashed potatoes. Plus you get the benefit of the all the nutrients of the potato skin. The mild buttery flavor of the roasted garlic is a perfect accompaniment to the buttery flavor of the potatoes. No power house garlic flavor here, just a lovely blending of flavors.

Ingredients

  • 1 Garlic Bulb roasted
  • Olive Oil
  • 2 lb red skin potatoes rinsed in cold water, cut larger potatoes in half
  • 1/4 cup Butter unsalted, lightly warmed
  • 1 cups Heavy Cream lightly warmed
  • Sea Salt & White Pepper to taste

Instructions

  • Roasted Garlic (can be done up to 24 hours ahead): Preheat oven to 425 degrees. Cut the top off the top of a garlic bulb. Drizzle exposed garlic with olive oil. Wrap tightly in foil and place on a baking sheet. Bake for 35 minutes. Let cool. Remove outside garlic skin and squeeze out the soft creamy garlic cloves.
  • In a large saucepan, boil the potatoes in salted water until very tender. While the potatoes are cooking, melt the butter and warm the milk. When the potatoes are fork tender, drain in a colander. Pour the drained potatoes back into the warm saucepan to help remove excessive moisture from the potatoes.
  • With a potato masher, smash the potatoes. Add the roasted garlic. Slowly add the warmed butter and milk until your potatoes are moist and fluffy. Season with sea salt and white pepper. Cover and keep warm on a low heat on the stovetop or in a 150 degree oven until ready to serve.
