Asian Glazed Salmon with Arugula Orange Salad

The longest day of the year, Sunday, June 21st

At around 9:30 pm, the sun gently touches the crystal blue waters of Lake Michigan, casting a million hues of orange and pink over the horizon. When the sunsets, it doesn’t mean we’ll be in the dark. We still get to enjoy the warm glow till ten o’clock at night.

On this evening, and the evenings surrounding it, I love to be outside on my deck soaking in the beautiful warm summer rays. It’s the perfect time to have a late night dinner outside whether it’s on your deck, boat or campsite.

When it comes to a late night dinner on the deck, I want to be on the deck not in the kitchen. So this menu was designed to let you enjoy that long awaited warm summer glow. The only cooking you’ll be doing is grilling outside!

Marinade For Salmon
  1. Puree the ingredients in a blender until smooth. Can be made a day ahead and refrigerated.
Grilling The Salmon
  1. Preheat grill to 400 degrees (slightly over medium heat). Lightly oil a sheet of heavy duty foil. Place salmon onto the foil. Fold edges up so that sauce will not drip. Place fish on grill and pour ½ the sauce over the fish. Grill (covered) until fish is just cooked through, basting frequently with remaining sauce. Keep some water on the side. If the sauce starts to darken on the bottom, add some water to prevent burning. Grill for about 20 minutes. *You can either grill the salmon filet whole or in individual 6 ounces pieces. *This recipe can be done in an oven, as well. 400 degrees for 20 minutes.

Arugula & Orange Salad
  1. Place arugula on each dinner plate. Drizzle with fresh lemon juice and olive oil. Season with fresh ground pepper and sea salt. Lay the cooked salmon on top of the arugula salad. Garnish with sliced oranges.

Recipe Notes

Cooking tip: Honey - spray your tablespoon with Pam Spray before measuring your honey. Your honey will just slip smoothly out of the tablespoon.
