On a lightly floured work surface, roll the puff pastry out till it’s about a third larger.
With a pastry brush, brush the top surface with the olive oil.
Spread the salt, pepper, paprika and cayenne over the oiled surface of the puff pastry.
Sprinkle the cheese over the pastry sheet. Lightly flour your hands and firmly press the cheese into the dough.
Line a baking sheet with parchment paper. Using a sharp knife or pizza cutter, slice dough into ½ inch strips. Cut the strips to the desire length you would like. Twist the strips and lay on the sheet pan without touching.
Bake sticks for 10 minutes or until golden brown.
Store in an airtight container. Sticks may not be as crispy the next day. To refresh, bake in a 375 degree oven for 5 minutes.
