There’s truly a world of meatballs out there. Ground meat is on the bottom of the ladder when comparing different cuts of meat. You take ground meat, add some spices and hold it all together with some eggs and breadcrumbs, and you just got on the express elevator to the penthouse!
We’re all familiar with the little cocktail beef meatballs served up in a sweet sauce and its big brother, the Italian meatball, perfect with spaghetti and marinara sauce. Now it’s time to broaden our horizons: the Greek Lamb Meatball, the Mexican Chorizo Meatball and the upscale Italian Veal Meatball.
They’re easy to make. Blend the ingredients, make some balls and pop them in the oven. They’re ideal for freezing. Make a large batch and enjoy your efforts over a period of time. And, unlike other leftovers, there’s so many different ways you can serve the same meatball.
