Bring steaks to room temperature.
Heat a medium size skillet over medium heat for about five minutes.
Add a small amount of canola oil to the bottom of the skillet
Season steaks with your favorite steak seasoning or with sea salt & fresh ground pepper.
Cook 6 minutes. Flip and cook an additional 5 minutes for medium rare. The internal temperature should be 125 degrees. The temperature will rise while the steak is resting.
Rest for 15 minutes before cutting. Cut into thin slices.
