- Bring steaks to room temperature. 
- Heat a medium size skillet over medium heat for about five minutes. 
- Add a small amount of canola oil to the bottom of the skillet 
- Season steaks with your favorite steak seasoning or with sea salt & fresh ground pepper. 
- Cook 6 minutes. Flip and cook an additional 5 minutes for medium rare. The internal temperature should be 125 degrees. The temperature will rise while the steak is resting. 
- Rest for 15 minutes before cutting. Cut into thin slices. 
- This can be done one day ahead.
