Spinach Pasta Capresse

There is no more perfect combination in the summer than tomatoes, spinach, basil & fresh mozzarella. Here's a new way to enjoy these high impact vegetables when there flavor is at it's peak. Fresh pasta is the best way to go (see recipe under Italian Pasta Recipe). But, dried pasta will work in a pinch.

Ingredients

Fresh Spinach Pasta

  • 1 lb Fresh Spinach Pasta

Capresse Sauce

  • 2 tablespoons Olive Oil
  • 2 pints Cherry Tomatoes halved
  • 12 ounces Kalamata Olives
  • 2 tablespoons Butter
  • 4 tablespoons Fresh Basil Leaves chiffonade
  • 1/2 lb Cherry Mozzarella Balls
  • Salt & Fresh Ground Pepper to taste

Instructions

Fresh Spinach Pasta

  • Cook the pasta as mentioned above. RESERVE 1 CUP OF PASTA WATER BEFORE STRAINING.

Capresse Sauce

  • Heat a large skillet on medium heat. Add 2 tablespoon olive oil. Sauté cherry tomatoes & kalamata olives for 5 minutes. Add 1 cup pasta water and 2 tablespoons butter. Salt & pepper to taste. Add pasta and cook till sauce has thickened. Add the mozzarella and fresh basil, tossing gently.
