Spinach Pasta Capresse
There is no more perfect combination in the summer than tomatoes, spinach, basil & fresh mozzarella. Here's a new way to enjoy these high impact vegetables when there flavor is at it's peak. Fresh pasta is the best way to go (see recipe under Italian Pasta Recipe). But, dried pasta will work in a pinch.
Capresse Sauce
- 2 tablespoons Olive Oil
- 2 pints Cherry Tomatoes halved
- 12 ounces Kalamata Olives
- 2 tablespoons Butter
- 4 tablespoons Fresh Basil Leaves chiffonade
- 1/2 lb Cherry Mozzarella Balls
- Salt & Fresh Ground Pepper to taste
