Preparing the Chicken
Heat a large skillet over medium heat. Coat the bottom of the pan with olive oil. Season the chicken thighs with salt & fresh ground pepper. Brown both sides of the thigh (about 5-6 minutes per side). Remove from pan and set to the side.
