Preheat oven to 400 degrees.
Melt butter over low heat. Add shallots, garlic, lemon juice, parsley, salt and pepper. Simmer for 5 minutes. Turn heat off.
Wash and dry scallop shells. Rinse and dry scallops.
Place shells on a sheet pan. Drizzle 1 teaspoon flavored butter into each shell. Top each buttered shell with a scallop. Top the scallops with the remaining flavored butter. Top each scallop with parmesan cheese.
Bake for 8 minutes. Turn the oven to broil. Cook an additional 3-4 minutes or until the scallops and cheese have turned golden brown. The internal temperature should be 125 degrees.
Top with microgreens or arugula.
