Heat the butter in a small sauté pan on low heat. Add the shallots and jalapeno. Cook for 5 minutes or until shallots just start to become translucent. Set to the side and cool.
In a small bowl; add the ground chicken, cooled shallots, jalapenos, any juice/butter from the sauté pan, jerk seasoning and salt. Mix thoroughly. Form into three 1/3-pound burgers.
Start with a hot, clean, oiled grill.
Heat grill to 450 degrees. Place the chicken burger and pineapples on the grill. Cook covered for 3-4 minutes or until the burger and the pineapple have nice grill marks on the bottom. Flip burger and pineapple and cover. Cook for an additional 3-4 minutes. Take pineapple off when you have grill marks on each side. Continue cooking the chicken for a few minutes or until the internal temperature reaches at least 165 degrees.
