Caribbean Chicken Burger

Caribbean Chicken Burger

Ingredients

  • 1 inch Pineapple peeled, cored, cut into 6 halfslices, lightly oiled
  • 1 pound Ground Chicken
  • 1 1/2 teaspoons Butter
  • 3 tablespoons Shallots, finely chopped
  • 1 tablespoon Jalapeno finely chopped
  • 2 tablespoons Urban Accent BBQ Jerk Seasoning
  • 1/2 teaspoon Kosher Salt
  • 1/2 Tomato diced, drizzled with olive oil & sea salt
  • 5 Scallions sliced on extreme bias
  • 1 Avocado peeled, sliced into wedges
  • fresh Lime Juice drizzle on avocado slices
  • Spicy Micro Greens
  • Whole Cilantro Leaves

Instructions

  • Heat the butter in a small sauté pan on low heat. Add the shallots and jalapeno. Cook for 5 minutes or until shallots just start to become translucent. Set to the side and cool.
  • In a small bowl; add the ground chicken, cooled shallots, jalapenos, any juice/butter from the sauté pan, jerk seasoning and salt. Mix thoroughly. Form into three 1/3-pound burgers.
  • Start with a hot, clean, oiled grill. Heat grill to 450 degrees. Place the chicken burger and pineapples on the grill. Cook covered for 3-4 minutes or until the burger and the pineapple have nice grill marks on the bottom. Flip burger and pineapple and cover. Cook for an additional 3-4 minutes. Take pineapple off when you have grill marks on each side. Continue cooking the chicken for a few minutes or until the internal temperature reaches at least 165 degrees.
  • Build Your Burger: Pineapple Slice, Chicken Burger, Diced Tomatoes, Scallions, Spicy Microgreens, Cilantro Leaves, Pineapple Slice *Fill top hole of pineapple with microgreens and a leaf of cilantro.
