Combine the tomatoes, caper berries, kalamata olives, basil and black garlic in a small bowl. Toss with white balsamic vinegar and olive oil. Season to taste with salt & pepper.
Dressing Preparation
Whisk the vinegar and olive oil together. Toss arugula in dressing.
Garnishing Preparation
Place arugula on a salad plate. Top with tomato relish. Garnish with manchego, caper berry and Spanish anchovy.
