Crooked Tree Aragula Salad with Tomato Relish


Salad Ingredients

  • 3 Tomato large, seeded, and chopped
  • 3 Caper Berry sliced
  • 10-12 Kalamata Olives sliced
  • 1 tbsp Basil fresh, chopped
  • 2-3 cloves Garlic black, sliced
  • 2 tbsp Balsamic vinegar Alessi, white
  • 1/4 cup Pons Spanish Extra Virgin Olive Oil
  • Pinch of Salt & Fresh Ground Pepper

Dressing Ingredients

  • 4-6 oz Arugula
  • 1 1/2 tbsp Alessi Fig Infused Vinegar
  • 4 tbsp Pons Spanish Extra Virgin Olive oil

Garnishing Ingredients

  • 4-5 oz Manchego Spanish, smoked, shredded
  • 6-8 Caper Berry
  • 6-8 Anchovies Spanish


Salad Preparation

  • Combine the tomatoes, caper berries, kalamata olives, basil and black garlic in a small bowl. Toss with white balsamic vinegar and olive oil. Season to taste with salt & pepper.

Dressing Preparation

  • Whisk the vinegar and olive oil together. Toss arugula in dressing.

Garnishing Preparation

  • Place arugula on a salad plate. Top with tomato relish. Garnish with manchego, caper berry and Spanish anchovy.
