Coffee Rubbed Wagyu Sizzler Steak and Eggs Served with Cheddar and Chive Hashbrown Patties

What a way to get the eyes opened, the body moving and your inner shine glowing! Seared coffee rubbed steaks served alongside a perfectly fried egg. The rich silky egg yolk of the sunny side up egg combined with the kicked-up coffee rubbed wagyu steak will fill your mouth with the warm glow of a northern Michigan sunrise.
A sizzler steak is also known as a petite sirloin. It is leaner than a New York Strip or a Rib Eye. It’s a great cut for pan searing and a more economical choice. A wagyu steak will have more feather fat than USDA Prime or Choice steaks, making for a very moist steak with deep flavor. The steak rub of espresso and ancho chili powder cuts through the richness of the steak and the oozing goodness of the egg yolk. A drizzle of fresh lime juice over the steaks brightens the flavors as the sun continues to rise in the east.
I highly recommend using local farm raised eggs. You will visually see that the yolk is a deep yellow almost orange color with tight egg whites. What you visually see is also reflected in the rich flavor of the egg yolk and the smooth (non-rubbery) texture of the egg whites.
Steak loves eggs but it also loves potatoes! I created hashbrown patties embellished with cheddar cheese and scallions. Crispy golden patties combined with nibbles of steak and eggs is an incomparable breakfast trio.
If you don’t want to head back to bed with an overly full stomach, you could forego the crispy hashbrowns and serve the steak and eggs with blanched asparagus drizzled with olive oil and lemon juice.

Ingredients

Kicked Up Coffee Rub for Steaks

  • 1 1/2 teaspoons Instant Espresso
  • 1 1/2 teaspoons Ancho Chili Powder
  • 1 1/2 teaspoons Smoked Paprika

Cooking the Sizzler Steak

  • 2 8 oz Wagyu Sizzler Steaks
  • Salt to taste
  • 4 1/2 teaspoons Kicked Up Coffee Rub
  • 1 1/2 teaspoons Canola Oil
  • 1/2 Fresh Lime

The Perfect Sunny Side Up Egg

  • 4 Local Farm Fresh Eggs
  • 1 tablespoon Butter or Olive Oil

Cheddar and Scallion Hashbrown Patties

  • ½ pound Simply Potatoes Hashbrowns
  • 1 large Egg beaten
  • 1 tablespoon Butter melted
  • ¾ cup Sharp Cheddar Cheese shredded
  • 2 Scallions the green part sliced
  • 1 tablespoon Flour
  • ½ teaspoon Granulated Onion
  • ½ teaspoon M-Salt
  • 1 tablespoon Canola Oil more if needed

Instructions

Kicked Up Coffee Rub for Steaks

  • Mix all the ingredients and set to the side.

Cooking the Sizzler Steak

  • Remove the steaks from the refrigerator15-30 minutes before you are ready to begin cooking.  Heat a 12-inch cast iron skillet over medium high heat. 
  • Season both sides of the steak with salt.  Generously cover each side of the steak with the Kicked-Up Coffee Rub.  Pat rub into the steak.
  • Drizzle the canola oil into the pan.  Add steak and cook on first side for 4minutes.  Flip and cook second side for 3minutes.  Internal temperature should be115-120 degrees for medium rare.  Remove from heat and drizzle with lime juice.  Let rest for 10 minutes.  Cook the fried eggs while the steaks are resting.

The Perfect Sunny Side Up Egg

  • Using the same pan as the hash brown patties.  Heat over medium heat.  Add the butter or olive oil.  Once the butter starts to foam.  Gently crack eggs and add to the hot pan.  Cook for 3 minutes.  Serve immediately.
  • Note:  If you don’t think the egg white will thoroughly cook, you can cover the pan.  Or poke some holes in the egg white and allow the uncooked white to transfer from the top of the egg to the surface of the heated pan.

Cheddar and Scallion Hashbrown Patties

  • Preheat the oven to 150 degrees.
  • Combine all the above ingredients.
  • Heat a large nonstick skillet over medium heat. Add canola oil. Divide mixture into quarters and create a patty with each quarter. Cook 3 minutes on each side, or until golden brown.
  • You can sauté the patties while the meat is resting. Or, if needed, keep warm in the oven while you cook the steak and eggs.

TIMING SUGGESTIONS
1. Bring steaks to room temperature, 15-30 minutes.
2. Create the hashbrown mixture.
3. Create Kicked-Up seasoning.
4. Season and cook steaks.
While steak is resting…
1. Cook the hashbrown patties.
2. Cook the sunny side up eggs.
3. Serve.
