Broiled Acadian Red Fish with Cilantro Lime Butter

Acadian Red Fish is also known as Ocean Perch. This fish lives deep in the ocean, obvious by its oversized eyes. It has a smooth texture and mild taste. It’s found in the Gulf of Maine.

Ingredients

  • 1 1/2 pounds Acadian Red Fish
  • 4 tablespoons butter melted
  • juice from ½ a lime
  • 4 tablespoons cilantro chopped
  • lime sea salt
  • fresh ground pepper

Instructions

  • Preheat broiler.
  • Melt the butter in a small sauté pan. Add the cilantro and fresh lime juice.
  • Foil a baking sheet large enough to fit the fish in one layer, skin side down. Wrap the fish fins with foil so they don’t burn. Brush melted cilantro lime butter over the flesh. Season with lime sea salt and fresh ground pepper.
  • Broil for 7-8 minutes or until the flesh just starts to separate and it is no longer translucent. Drizzle a little more lime juice over the fish and serve immediately.
  • Serve with Cuban Rice.
