Grilling The Ultimate Steak

Instructions

  • Remove the steak from the refrigerator and set out to reach room temperature (10-15 minutes, at least). Season with salt & fresh ground pepper or your favorite steak seasoning.
  • Preheat the grill for 10 minutes at 500 degrees. Scrape grill, to clean. Turn off the middle burner, maintaining a temperature of 500 degrees. Cooking the steaks over the middle burner will help prevent flare ups.
  • Cook steaks over middle grill for six minutes on one side and five minutes on the other side for medium rare. Keep the grill covered will cooking.
  • Let steaks rest for 10 minutes before serving. This will allow the juices to continue cooking. If you slice the steak earlier, the juices will run off and the steak will become dry. While the steak is resting, the internal temperature will increase by 5 to 10 degrees.
  • Cooking Time is based on a 1ΒΌ inch thick steak.

Notes

Rare: 125 degrees, 5 & 4 minutes per side
Medium Rare: 135 degrees, 6 & 5 minutes per side
Medium: 145 degrees, 7 & 6 minutes per side
