Porcini Pasta with Fresh Morel Cream Sauce

This recipe is for those who love mushrooms. When morels are in season, this is a great way to enjoy their woods earthy flavors. Feel free to substitute another mushroom during the off seasons. Ingredients

Fresh Pasta

  • 1 lb Fresh Porcini Pasta

Morel Mushroom Cream Sauce

  • 2 lb Fresh Morels
  • 2 tablespoon Olive Oil
  • 2 clove Garlic minced
  • 1 cup Italian Pinot Grigio
  • 1 cup Heavy Cream

Instructions

Fresh Pasta

  • Cook the pasta as mentioned above. RESERVE 1 CUP OF PASTA WATER BEFORE STRAINING.

Morel Mushroom Cream Sauce

  • Heat a large skillet on medium heat. Add 2 tablespoon olive oil. Sauté morels and garlic for 10 minutes. Add 1 cup pasta water, 1 cup of wine and 1 up heavy cream. Salt & pepper to taste. Add pasta and cook till sauce has thickened. Garnish with parmesan and parsley.
